Rice Payasam

it is one of the common sweet dish in india as well as in assam especially served in any ritual ceremonies.

  • 1/2 cup of rice (*joha/kalijira rice)
  • 1 liter of cow milk
  • 5 tablespoon of sugar
  • 1 tablespoon of ghee
  • 1 tablespoon of honey
  • 10 whole cashew nut
  • 10 raisin
  • pinch of saffron

How to prepare:
  • rinse the rice grains with clean water
  • keep the rice soaked in cold water for 30~45 minutes
  • in a tall pan put the milk
  • keep the pan on medium flame for 10~15 minutes until it starts boiling
  • add the ghee,the sugar and the honey into the milk
  • after 5 minutes add the soaked rice into the boiling milk
  • keep stirring the milk until you can see the rice grains boiled enough
  • add the cashew nuts and the raisins
  • once the rice is cooked add pinch of saffron into the payasam
  • pour the rice payasam into a serving bowl and keep it for a while to cool down

rice payasam tastes better if it is served cold
